  1. In a large skillet, add the olive oil, onion, zucchini, frozen peas, and mushrooms. Let them cook on medium-high heat for 5 minutes stirring occasionally.
  2. Remove the vegetables from the pan and set aside in a bowl. Add the chicken broth, water, and pasta into the skillet. Cover and cook on medium heat for 5 minutes.
  3. Add the broccoli and cook covered for another 5-7 minutes or until pasta is cooked and the liquid is mostly absorbed.
  4. Reduce heat to low and add the cream, butter, Parmesan cheese, and garlic. Stir the pasta mixture and then add in the vegetables that were set aside.
  5. Season with salt and pepper and let cook 2-5 minutes until mixture has thickened. Serve and sprinkle with Parmesan!
