  1. In a large bowl season the diced sweet potatoes with chili powder, paprika, garlic powder, cumin, salt and dried cilantro.
  2. In a large skillet, add a tablespoon of avocado oil and cook the sweet potatoes on Medium/High heat. Cover them and cook for 10 minutes, and then uncover and cook for another 10 minutes. By covering, the sweet potatoes will soften. Make sure to stir every so often.
  3. Lower the heat and add the radishes, corn, and black beans to your skillet. Cook together for 5 more minutes.
  4. Warm your tortillas in the microwave for 20 seconds or on a skillet and assemble your tacos!
