I can confidently say, I haven’t met a taco I didn’t like. I also can say I never had a vegetarian taco before today. Sweet potato tacos caught my attention a few weeks back when Erik and I were out to lunch. I was inside sitting at a high-top window seat when a man sitting at an outdoor table beside me was chowing down on a basket of veggie tacos. My head was moving from my plate to his while I began to regret ordering a buffalo chicken wrap.
From that day on, I’ve been curious about meatless tacos. It just turned out that I didn’t have any chicken in the house but I had plenty of sweet potatoes. I made sweet potato black bean corn tacos that were definitely restaurant quality. The variety of vegetables give the tacos a ton of flavor while they stay healthful. The sweet potatoes in this meal keep you full and you won’t even miss the meat.
