Every once in a while, like a true Chicagoan, I crave a juicy Italian beef sandwich. The soggy bread, the sweet peppers, and the gooey cheese remind me of home. I grew up attending Chicago Bears tailgate parties, and beef sandwiches were always on the menu. My dad would have a large pot of Italian beef cooking on the portable grill and my job was to top each sandwich with extra juice and peppers.
Today, being Super Bowl Sunday, I have football and Italian beef sandwiches on my mind. Unfortunately, it’s pretty tough to find beef sandwich around Atlanta, let alone a GOOD beef sandwich. I made this Stuffed Italian Beef Loaf to satisfy my cravings. This loaf makes a great party food because it’s not messy like a real Italian beef sandwich. It’s also a finger food, so I don’t feel so guilty when I eat a few!
