  1. Turn the oven broiler on. Cut up peppers and onions, toss them in light avocado oil and then spread them out on a baking sheet. Broil them for 15 minutes, flipping once or until they begin to brown.
  2. While the veggies are roasting, season the strip steak with a cumin, salt, pepper, onion powder, garlic, and chili powder. Then sprinkle with lime juice and cilantro. Cook the steak in a skillet with a tablespoon of butter for about 5 minutes on each side or until cooked how you prefer.
  3. Microwave Minute Ready Brown Rice for 90 seconds– tough, I know! (You can also make stove-top rice but this is much easier)
  4. Build your fajita bowl together by laying down a bed of lettuce, and topping with rice, beans, avocado, steak and veggies! You can enjoy your fajita bowl plain or topped with a salad dressing of your choice.
