This dinner is my take on a burrito bowl, it contains protein and veggies. It is just as filling as it is healthy, the perfect combination for any week day meal. If you’re craving tacos or fajitas but don’t want the extra calories of a taco shell, throw the meat over vegetables and a bed of lettuce—it is just as satisfying.
