Mexican Ground Turkey Stuffed Peppers

  1. Using a knife, cut the tops off the peppers. Scoop out the seeds and membrane of the pepper.
  2. In a large skillet, brown the ground turkey until it’s about 75% cooked. Add the onion, pepper, garlic, and cook for about a minute. Add the salsa, the seasonings and about ½ cup of the enchilada sauce and stir. Then remove from the heat.
  3. Stuff the peppers with your ground meat mixture about 80%. Add a spoonful of enchilada sauce then top with more meat mixture. Continue doing this until all peppers are stuffed.
  4. Put a tablespoon of olive oil in the bottom of the crock-pot/ slowcooker and then line the peppers, standing up. Let the peppers cook on low heat for 5 hours or high heat for 3.
  5. If adding cheese, top the peppers with cheddar cheese the last 15 minutes of cooking. Top the Mexican Ground Turkey Stuffed Peppers with avocado, fresh cilantro, and sour cream.
Recipe Notes

This recipe would also work in the oven. If doing so, I’d suggest to pre-cook the peppers for about 10 minutes in the oven before stuffing them and then bake again.
