Remove the chicken giblets. Rinse the chicken inside and out. Generously season the chicken with salt & pepper, remember to season both sides.
Stuff the inside of the chicken or cavity with the lemon, onion, garlic, and seasons. Using kitchen twine or foil, tie the legs of the chicken together to hold the stuffing in.
In a small bowl, mix together ghee, avocado oil, lemon juice, garlic and rosemary. Brush the mixture onto the chicken, coating it heavily. Flip the chicken and coat the other side and flip once more so the chicken is resting on its back.
Roast the chicken for 1 hour 20 minutes then remove the chicken from the oven and cover with foil while it cools down. (After 25 minutes, I flipped my chicken over and cooked another 25 minutes, then let the chicken cook as it started the remainder of the time.)
