Lemon Garlic and Herb Roasted Chicken is everything I want in a meal. This chicken is easy to cook, delicious, it feeds many, and can be recycled into other meals. Surprisingly, this was my first time making a whole roasted chicken. I was a bit anxious but how difficult could it be, season, stuff, and more seasoning?
I took on the challenge of making a whole chicken after a conversation I had with a coworker. Last week she approached me and said, “You know what you haven’t made, that you need to? A roasted “rotisserie” chicken! They’re so delicious and can be stuffed and seasoned with just about everything.” I walked away thinking to myself, she’s totally right, I never made one before and I absolutely need too. I’ve bought rotisserie chickens at the grocery store a number of times, they’re perfect when I’m looking for a quick meal or if a recipe calls for shredded chicken, but never have I cooked my own. I confidently accepted the challenge and got to brainstorming on how to dress the chicken.
When making a chicken or really anything, fresh seasonings are the way to go. I bought fresh thyme and rosemary to spruce up the chicken. I definitely wasn’t shy when coating the chicken with the ghee mixture which paid off in the end. This lemon garlic and herb roasted chicken is so flavorful!
