  1. Preheat the oven to 375 degrees and grease an 8X4 loaf pan.
  2. In a small bowl mix dry ingredients; sugar, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, mix your eggs and oil. Add vanilla. Mix and slowly add the dry ingredients. Once mixed well, add the zucchini and mix again.
  4. Pour the mixture 2/3 of the way up into a greased loaf pan and bake at 375 degrees for 35-40 minutes.
  5. Remove the bread from the loaf pan and let the bread cool before slicing.
