  1. Season the beef chuck roast with 1/2 tsp of salt and 1/2 tsp of pepper. Then lay the roast in the crockpot.
  2. Arrange the vegetables around and on top of the roast, sprinkle the seasonings over the meat and then drizzle the balsamic vinegar over both.
  3. Pour the beef stock over the roast and vegetables, cover and let cook on high for 5-6 hours.
  4. Using a spoon with slits, remove the meat and vegetables from the pan crockpot and plate. Be careful, the short rib should be soft enough that it will fall apart when removing.
