It’s hard to think about life before butternut squash risotto. It wasn’t too long ago that I’d walk right past the squash section at the grocery store. I was intimated by their weird shapes and hard skin. I definitely had no idea what a butternut squash tasted like or what in the heck I’d ever use one for. That all changed when I had a bite of a butternut squash ravioli, soon I realized what I was missing out on. Absolute deliciousness! One of my favorite ways to serve winter squash is in risotto, it’s delicious, sweet and filling.
