Shredded Buffalo Chicken
  1. In an Instant Pot or Slow cooker add Chicken breasts, Chicken broth, garlic, celery, and onion. (Slow cook on high for 2 hours or Instant Pot on High Pressure, sealed valve for 12 minutes). Using a dutch oven or regular saucepan is also an option too. Just bring the chicken to a bowl and let simmer until you’re able to shred with a fork.
  2. Once the chicken is cooked and you’re able to pull it apart with a fork, shred the chicken and add the buffalo wing sauce. Mix well until the chicken is soaked in the sauce.
  3. While the chicken is cooking, prepare your quinoa according to the package.
Assemble the Bowl
  1. Layer your bowl beggining with the Spinach and Quinoa, then top with the shredded chicken, carrots, cabbage and avocado. Garnish with green onion and cheese. Top with a splash more of buffalo sauce and enjoy.
