I think bowls are great and I love the concept of tossing a ton of ingredients together. Layered with grains, greens, and vegetables you’ll be packing in the nutrients. Erik loves buffalo wings, and this Buffalo Chicken Quinoa Bowl is a healthier take on one of his favorite bar foods.
Before moving to Atlanta, Protein Bar was one of my favorite lunch spots. I always could count on it for a healthy lunch or refreshing smoothie. I love their Buffalo Chicken quinoa bowl, but since moving away, I haven’t been able to find anything comparable. With Protein Bar’s menu on the mind, I made my own copy-cat version. I slow cooked the chicken and then simply layered the ingredients into a bowl.
