Egg in a Nest
Instructions
  1. Preheat the oven to 400 degrees
  2. I used fresh potatoes and sliced them thin like hash browns (you can use frozen hash browns too if you prefer)
  3. Pack them into an oiled/greased ramekin; pack the potatoes tight and up the sides of the ramekin to form crust
  4. Sprinkle the top of the potato crust with salt and pepper
  5. Place in the oven for 15-20 minutes or until potatoes are a golden brown color
  6. Once the potatoes look golden, take them out of the oven and crack an egg on top. Then sprinkle with a little more pepper and bacon bits
  7. Place the ramekins in the oven for 5-10 more minutes depending on how you prefer your eggs
  8. Using a spatula slide the nest of out the ramekin or cupcake pan onto a plate & enjoy!
