Thanks to hurricane Irma, the weather has turned and Atlanta’s temperature is in the 60’s. As you can imagine, it’s really starting to feel like fall over here. Today was rainy and cold, which meant I was craving a warm meal. This amazing biscuit chicken pot pie is the ultimate comfort food. Instead of making a traditional pot pie with a pie crust, I used biscuits to create a flaky delicious topping. The filling is packed with carrots, peas, onions, celery, mushrooms and chicken while the top is light and soft. This meal screams home and warmth.
Surprisingly, this biscuit chicken pot pie is a quick meal. It’s also one of those meals that you can use whats in the fridge, toss it together, add a biscuit on top and you have yourself a delicious meal. Next time you’re searching for a warm meal, try this biscuit chicken pot pie.
And yes, I used store bought biscuits, so if you decide to do the same—I’m not judging you. Next time, when my patience is stronger than my hunger pangs, I will make this recipe using homemade biscuits! I will be sure to share with you’ll!
Storm update: We survived Irma down here in Georgia, Many of our co-workers and neighbors lost power for over 24 hours and had trees fall down. Lucky for Erik and I, we only experienced about a three hour power shortage and thankfully we were at the office when that happened. For those of you who weren’t as lucky, we’re praying for you!
