I spent two days dreaming of beef short rib ragu.
This weekend, Erik and I were in Baltimore celebrating our friends’ wedding. It was my first time in the city and I was impressed. The streets were cobble stone and the restaurants were quaint. On Friday night, we walked around Fells Point and wandered into a restaurant with live music. When it came time to order dinner, the short rib slider was calling my name. I thought I had my mind made up until Erik reminded me that I was in Maryland. He convinced me to order the crab cake. I’m glad I did, it was absolutely delicious and definitely lived up the “Maryland-crab” reputation.
Two days later, short rib was still on my mind. I spent the flight home thinking about making short ribs for dinner. Just an hour after I landed home in Georgia, I began cooking. I made beef short rib ragu and it was so good. This recipe definitely took some patience, the beef short rib need at least 2 hours to cook but it is well worth the wait. Serve it over pasta, mashed potatoes or Polenta and no-one will be disappointed.
