Making the Crust
In a large bowl or KitchenAid mixer, add the flour.
Slice the butter into about 8 pieces and add the butter to the flour. Mix using a hand mixer on low speed. The butter should begin to blend and look like crumbles.
Add the 2 tablespoons of water and mix a few times until the dough comes together. Once it begins to form, use your hands to form into a ball.
Lightly flour the surface and dough. Use a rolling pin to roll the dough into a circle large enough to cover a 9.5″ pie dish. Press the dough into the dish to form a crust. To prevent the dough from breaking, try rolling it and then putting it over the dish and unroll. Use a knife to trim the edges and cut any extra dough. (While preparing the filling, keep the crust away from the oven to avoid the butter melting. Do not pre-cook the crust.)
Preheat the oven to 350 degrees.
In a large bowl mix the eggs, cream, water, salt, pepper and parsley, Mix in the cooked bacon pieces, cheese, and onion.
Pour the filling mixture into the prepared crust. Bake in the oven for 40 minutes, the egg should be set and the top a light golden brown.
Let the quiche sit 5 minutes before cutting into wedges.
