Making the Crust
  1. In a large bowl or KitchenAid mixer, add the flour.
  2. Slice the butter into about 8 pieces and add the butter to the flour. Mix using a hand mixer on low speed. The butter should begin to blend and look like crumbles.
  3. Add the 2 tablespoons of water and mix a few times until the dough comes together. Once it begins to form, use your hands to form into a ball.
  4. Lightly flour the surface and dough. Use a rolling pin to roll the dough into a circle large enough to cover a 9.5″ pie dish. Press the dough into the dish to form a crust. To prevent the dough from breaking, try rolling it and then putting it over the dish and unroll. Use a knife to trim the edges and cut any extra dough. (While preparing the filling, keep the crust away from the oven to avoid the butter melting. Do not pre-cook the crust.)

  3. Pour the filling mixture into the prepared crust. Bake in the oven for 40 minutes, the egg should be set and the top a light golden brown.
  4. Let the quiche sit 5 minutes before cutting into wedges.
