I left Italy feeling inspired and full. The food was absolutely delicious and the experiences are unforgettable. We even took a cooking class and I have a few new kitchen tricks that I’m eager to try. I mean, who knew you can peel mushrooms? I can’t wait to teach you ‘all sometime soon but let’s rewind back to the being full part.
After 10 days of no food rules, I returned home longing for fruits and vegetables. Wouldn’t you too, if you licked gelato on the top of Capri, slurped pasta in the streets of Venice and scarfed down pizza in the piazzas of Rome? The next few days the Swinton’s are fueling up on lots of greens and I’ll be posting flavorful salad recipes as I spend the next few days tossing them up.
