I’m definitely one to fall into the sweet craving trap after a meal. I’m always digging for that handful of chocolate chips or spoonful of ice-cream, but this time it was Erik. After dinner he turned to me and said, “I wish there was healthy dessert that we can have, like cake.” This is the guy who always yells at me for wanting a piece of chocolate after dinner and believes the cravings are all in my head. Oh well, I’m always up for dessert and an experiment.
I decided to try making a healthy version of a chocolate chip cookie and these turned out super good. They are almond flour-chocolate chip cookies with coconut oil and coconut sugar. To keep my husband’s interest, I didn’t cut the butter from the recipe but I’d like to believe they’re a healthy alternative when it comes to dessert. My only regret is forgetting to check the expiration date on my baking soda prior to mixing everything together… my cookies turned out a bit flat!
When wine is a main ingredient how can you not love the dish? I had plenty of mushrooms in the house so I tossed together an easy, old-school Italian dish, chicken Marsala. I served it over spaghetti and chased it down with a glass of wine… just in case there wasn’t already enough. 🙂
Last night we finally returned home from a week long family vacation in Florida. We couldn’t have asked for a better trip, the week was filled with sunny weather, strong drinks, and delicious food. Although Georgia is still pretty warm, the drop in temperature had me craving some hot soup and the heavy thanksgiving dinner had me longing for veggies. Did I mention we ate A LOT of heavy food? I threw together a pot of my grandma’s soup, a family classic, and it was everything I wanted. The soup broth has a lot of flavor, it’s great by itself though I think the real reason it’s so delicious is the homemade dumplings we pair with it.Try out my grandma’s infamous recipe and let me know what you think!

It’s hard to think about life before butternut squash risotto. It wasn’t too long ago that I’d walk right past the squash section at the grocery store. I was intimated by their weird shapes and hard skin. I definitely had no idea what a butternut squash tasted like or what in the heck I’d ever use one for. That all changed when I had a bite of a butternut squash ravioli, soon I realized what I was missing out on. Absolute deliciousness! One of my favorite ways to serve winter squash is in risotto, it’s delicious, sweet and filling.
P.s. did you know in Australia the butternut squash is sometimes known as gramma?
