This weekend, Erik and I were in Baltimore celebrating our friends’ wedding. It was my first time in the city and I was impressed. The streets were cobble stone and the restaurants were quaint. On Friday night, we walked around Fells Point and wandered into a restaurant with live music. When it came time to order dinner, the short rib slider was calling my name. I thought I had my mind made up until Erik reminded me that I was in Maryland. He convinced me to order the crab cake. I’m glad I did, it was absolutely delicious and definitely lived up the “Maryland-crab” reputation….
Here we are, four days and four salads. If you missed my last post, a trip to Italy has left me in a carbohydrate coma. My insane grocery shopping habits have also left me with a lot of fruits and vegetables. Thanks to the two of these realities, I’ll be tossing salads. The first salad is a Grilled Chicken Greek Salad. I love Mediterranean food and this salad reveals all of those amazing flavors.
Time flies when you’re having fun, doesn’t it? Here we are on my fourth salad, a blueberry & pear spinach salmon salad.
When looking ahead, 2017 is looking pretty good for us! Erik and I have a few trips to look forward to, including our honeymoon! Since there will be a lot of bathing suits in my future, I’ve been a little more disciplined in the kitchen. For example, filling out meals with more vegetables and cutting back on dairy.
Lately, I’ve been searching for a healthy alternative to the buffalo chicken dip my husband loves so much. This recipe doesn’t call for the usual cream cheese or cheddar cheese. These buffalo chicken meatballs are super tasty and carry the heat you can find in a hot wings or buffalo dip. They’re the perfect super bowl snack!

And if any of you are as clueless as my husband then yes it’s true, vodka sauce is really made with real vodka! No wonder why the stuff is so good! Yesterday was Sunday, which means it was crockpot Sunday in the Swinton household so I made Turkey & Sweet Potato Chili. Like I said once before, crockpots are perfect for Sunday’s because they’re simple and need little to no attention. I spent the day running errands and came home to a meal ready to eat! My favorite part about chili is all of the different toppings that can go along with it, so I made a topping bar and the options were endless.
Today I made a hearty vegetable soup. It’s a spin-off of my favorite minestrone without the beans and noodles (since we’re trying to eat light). I’ve been trying whip up some healthier meals because as soon as our wedding was over, we really took indulging to a new level. Erik especially. The Monday after the wedding Erik ate two bagels loaded with butter, a chocolate donut, a large Oreo mint chocolate shake, chicken parmesan and a basket of bread finished with a handful of M&Ms. I know what you’re thinking, EW!
