I stumbled upon Julia Child’s scalloped potatoes and realized they were something I’ve never tried making before. I followed her recipe as a guideline and made a few modifications of my own….

For this pasta dish, I traded the usual red sauce for a light creamy sauce and a ton of vegetables. It’s a bit lighter than Alfredo and with all the added vegetables, you don’t feel so guilty. The white sauce is still comforting as you’d imagine too! I’d like to think of this Vegetable Pasta Primavera as the adult version of macaroni and cheese, it’s creamy and wonderful.

Instead of making a traditional pot pie with a pie crust, I used biscuits to create a flaky delicious topping. I cannot exactly pin point when my love affair began with short rib, but sometime in the past few years-it happened. I’d like to credit the South but there is no need to point fingers, either way, the stuff is good! This crockpot balsamic beef short rib, is no exception. It is so delicious and the meat falls apart with the touch of a fork.
I love this meal because it’s effortless and delicious. Erik and I were out of town for a wedding (again!) and came home to an empty house with no groceries.
