This Mexican Ground Turkey Stuffed Pepper recipe is a different take on the usual beef and rice stuffed pepper. Why are these so unique? Well, for starters, these peppers are filled with ground turkey and veggies making them a great low-fat substitute. Secondly, they are seasoned with cumin, chili powder, and salsa which gives them an authentic Mexican flavor and kick. And lastly, the Mexican ground turkey stuffed peppers are made in the slow-cooker which allows them to really soak up flavor. I promise you will like these stuffed peppers. Top them with cheese and avocado and you will be salsa dancing around the kitchen!…
I can confidently say, I haven’t met a taco I didn’t like. I also can say I never had a vegetarian taco before today. Sweet potato tacos caught my attention a few weeks back when Erik and I were out to lunch. I was inside sitting at a high-top window seat when a man sitting at an outdoor table beside me was chowing down on a basket of veggie tacos. My head was moving from my plate to his while I began to regret ordering a buffalo chicken wrap….
Does the thought of coming home from work and having to cook dinner give you anxiety? If so, you’re not alone! My sister is always looking for a light and quick dinner to whip up on the crazy work days. Me, I don’t mind taking an hour or two preparing a long meal, but that’s why we call it a hobby. If you’re more like Samantha, than my Steak Fajita Bowl is a great week night dinner for you….
The Spinach Salmon Salad with mango & strawberry salsa was Erik’s favorite of the four. I admit, this was my first time making a salad with salmon. Usually I opt for chicken but I thought, why not mix it up? The sweetness of the strawberries and mango really add a lot of zest to the dish while keeping it light.

Yesterday was Sunday, which means it was crockpot Sunday in the Swinton household so I made Turkey & Sweet Potato Chili. Like I said once before, crockpots are perfect for Sunday’s because they’re simple and need little to no attention. I spent the day running errands and came home to a meal ready to eat! My favorite part about chili is all of the different toppings that can go along with it, so I made a topping bar and the options were endless.
