Saturday afternoon, just hours after we landed, I headed to the grocery store. Actually, I went to three grocery stores. For most, this would sound absolutely awful, shopping after a 12 hour flight but for me, the grocery store is my sanctuary. I find serenity by walking down each aisle and discovering new products. With each item I pick up my brain goes into creative mode, brainstorming of all the enjoyable dishes I can make. …yes I’m weird.
While walking around the store after two weeks of traveling and in a food coma state, fruits and veggies were the only thing on my mind. My grocery list was garbage from the moment I walked in to the first store. I was grabbing everything green and nutritious in sight. And the outcome of my reckless shopping? Four salads in four days. Each night I made a new flavorful and simple salad, all hearty, healthy, and husband approved!
