Almond Crusted Chicken Fingers

Will I ever stop craving childish meals like chicken fingers and grilled cheese?

I am pretty sure I’ve hit the age where it’s publicly unacceptable to order chicken fingers at a restaurant without being accompanied by a person under the age of 10. I’ve also hit the age where my body doesn’t appreciate fried foods. Luckily, I’ve come up with the adult version of chicken fingers that are equally as delicious as those childhood tenders and they’re Whole30/Paleo compliant.


  • 2 large boneless chicken breasts (makes 6 chicken strips)
  • 1 egg
  • 1 cup raw almonds
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tbsp. garlic powder
  • 1 tsp. oregano
  • ½ tsp. basil
  • 1 tsp. parsley


  • Preheat the oven to 450 degrees
  • Line a baking sheet with parchment paper and spray with cooking spray
  • Put almonds, salt, pepper, garlic, oregano, and basil in food processor and grind until you have a meal- then pour onto a large plate
  • Tenderize your chicken breasts and then cut each into 3 long pieces (so you have chicken strips) also trim off any fat
  • Crack the egg in a small bowl and whisk with 1 tbsp. of water
  • Dip your chicken strips into the egg mixture and then toss in the almond “meal”
  • Place chicken strips on the greased parchment paper and bake for 15 minutes
  • Flip the chicken over and back for another 15 minutes or until golden
  • Sprinkle with parsley and serve
